If you are trying to get aged wood in New World, you will need to level up your logging skill to level 50 and chop down mature trees. 

You can find these trees usually all over the world near other groups of trees, but the only difference would be that they will be called mature trees instead of young, etc. 

These trees will also give you aged wood, so if you want to chop one of these trees down, you will need to level your logging skill and craft several hatches. Luckily, you can make hatches via crafting stations such as campfires.

However, you will still need to level your logging skill up before you can chop mature trees down. To do this, we highly recommend simply farming the low-level trees repeatedly. These trees would be called young trees, and you can find them everywhere there are trees, etc. 

That being said, farm these trees, and eventually, you will hit level 50 in logging - it won't take long, so don't worry. Also, the higher you raise your logging skill, the faster you will chop trees, so if you want to hit level 50 faster, just keep chopping those trees down.
